Amaranth Pudding
Ingredients

cups
popped amaranth
2
cups
milk
2
cups
water
2
eggs
2/3
cup
honey or agave nectar
or to taste
1
tsp
vanilla
1
tsp
cinnamon
handful raisins
optional
Instructions
Put the amaranth in water and bring to a boil and cook until water is absorbed, 15-20 minutes..
Add milk, eggs and sugar and cook over low heat until the mixture thickens. Add raisins and vanilla.
Cool and serve with cinnamon.
