Low-Calorie Apple Flax Seed Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup ground flaxseed
  • 1/2 cup unsweetened applesauce
  • 1/2 cup unsweetened almond milk
  • 1/3 cup honey
  • 1/4 cup coconut oil melted
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 medium apple peeled and chopped

Instructions

  • Preheat oven to 375°F (190°C) and line a muffin tin with muffin liners.
  • In a large bowl, whisk together the flour, flaxseed, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, mix together the applesauce, almond milk, honey, coconut oil, and egg until well combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • Fold in the chopped apple.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
