Low Carb Zucchini Pizza Boats

I'm still trying to sell some of my friends on the idea of eating low carb and keto. These low carb zucchini pizza boats can be credited as a major selling point!
I made them for a friend the other day, and he commented that they were almost better than regular pizza!
I agree they are amazing. You definitely won't feel like you are missing out on traditional pizza if you eat these.
To make 12 Low Carb Zucchini Pizza Boats, you will need:
- 6 green zucchini
- 8 oz can tomato sauce
- 1 lb ground beef
- 1 – 5 oz pkg pepperoni minis
- 2 Tbsp garlic and herb no-salt seasoning
- 1/2 cup shredded parmesan, romano, and asiago cheese blend
- 12 oz finely shredded mozzarella cheese
How to Make Low Carb Zucchini Pizza Boats
Preheat the oven to 350 degrees. While the oven is preheating, cook the ground beef in a pan.
To prepare zucchini, slice them in half lengthwise, then use a spoon to scoop out most of the seedy center. Arrange them on a baking sheet.
When ground beef is cooked, drain and cool for a few minutes. Combine the shredded parmesan, romano, and asiago cheese blend, garlic and herb seasoning, and tomato sauce with the meat.
Spoon the meat mixture into the zucchini.
Bake for 15-20 minutes until mostly tender. Top with mozzarella cheese and pepperoni minis. Bake for another 5-10 minutes until cheese is melted and zucchini is tender.
Cool and serve.
