Mini French Bread Pizza Recipe

This mini french bread pizza recipe gives you the best of both worlds, a pizza taste that your family loves, plus a super easy weeknight meal that you can put together in minutes.

My family often enjoys this meal on Wednesday nights before church. It's a very portable meal, so if we are in a hurry, my kids can grab a mini pizza and eat it on the way.

To make about 12 mini pizzas, you will need:

  • 1 loaf sliced french bread, preferably traditional sourdough (I get mine from a local bakery)
  • 6 oz tomato paste
  • 12 oz mozzarella cheese, shredded
  • Your favorite pizza toppings, prepared
  • Your favorite Italian seasonings (I use this)

Pizza Toppings:

I used chopped ham this time around. You could also use cooked ground beef or chicken, pepperoni, Canadian bacon, black olives, sauteed onion, green pepper, or mushrooms, or vegetables (cooked al dente).

I used a full-size sheet pan to bake my mini pizzas. I bought mine at a restaurant supply store, but you can get one here, too.

How to Make This Mini French Bread Pizza Recipe

Preheat your oven to 400 degrees. Grease a cookie sheet or sheet pan (I use coconut oil and a silicone basting brush) or line the pan with parchment paper.

Lay the french bread slices on the pan and spread tomato paste on each slice. Sprinkle a little of your Italian seasoning on each slice. If you don't have any Italian seasoning on hand, you can also use a bit of sea salt and black pepper.

Top each of the slices with your favorite prepared pizza toppings. I used chopped ham this time.

Finish off the slices with a mound of mozzarella cheese on each one.

Bake in the oven for 10-15 minutes or until the cheese is melted and the mini pizzas are heated through. You may prefer to use a broiler instead, but watch them carefully!
